No Bake Cookies
No Bake Cookies 




I blogged recently about Pigs In A Blanket, and how that recipe reminded me of school days, and eating in the cafeteria. Today's recipe is No Bake Cookies, and the school cafeteria, again, is where I was introduced to this cookie.


The cookie goes together quickly! It is a good idea to have ingredients measured. And a cookie sheet lined with waxed paper.


Start by bringing the sugar, milk, cocoa and  butter to a boil.


Then stir in the oats, peanut butter and vanilla.


Here's where you have to act quickly, as the cookies start to firm really fast!


Just scoop, or spoon, the cookie mixture onto the prepared cookie sheet. Then transfer to the refrigerator to set.





NO BAKE COOKIES

INGREDIENTS:
2 Cups sugar
1/2 Cup milk
1/2 Cup cocoa
1/4 Pound butter
1/2 Cup peanut butter (chunky peanut butter for a softer texture)
3 Cups quick cooking oatmeal
1 Teaspoon vanilla

DIRECTIONS:
Combine sugar, cocoa, butter and milk. Bring this to a full rolling boil. Boil exactly 1 minute. Remove from burner and add remaining ingredients. Working quickly, drop by spoonfuls onto waxed paper. Transfer cookies to the refrigerator to set. Store in an airtight container, refrigerated. Yields 40 cookies.

A tip for softer No Bake Cookies - swap smooth peanut butter,  for chunky peanut butter.
