Let me teach you how to safely butterfly pork chops. Typically, you would cut horizontally, across a single chop. Cutting on a wiggly piece of meat is dangerous.

My technique is not only safer, it has a cost savings advantage. Working with a whole pork loin is cheap. I purchased this whole pork loin, on sale, for $1.99/lb. 

Before slicing into the pork loin, take a moment to remove the tough silver skin.

To make the butterfly cut:

Make sure the end piece is upright, at a 90 degree angle.

To make a 1" chop, move the knife in, 1/2" from the edge.

Slice down, leaving 1" from the bottom. Your knife placement will end at 1" above the board.

Move your knife over 1/2" from the last cut. This time slice all the way through the meat.

It's so much easier than fiddling with a horizontal piece of meat. It's the safest way to make a butterfly cut. Also, this technique gives a professional, symmetrical cut.
