This is my daughter’s recipe for Quick Pickled Onions. It’s a simple recipe that elevates your dishes. Use it as a topping, on eggs or omelettes. The perfect sandwich topping. A great side dish, for Mediterranean or Middle Eastern food. You’ll want to keep this stocked, in your refrigerator; and put it on everything!

QUICK PICKLED ONIONS
INGREDIENTS:
1 Large red onion, peeled, quartered, thinly sliced
2 Limes, juiced
3/4 Teaspoon sugar
1/4 Teaspoon salt
DIRECTIONS:
Place ingredients in a airtight container. Shake well. Refrigerate 5 minutes. Keeps, up to 2 weeks, in the refrigerator.
USES:
Omelette
