Ever make a dish and say, this is the best I've made? That's exactly what I said when I tasted this delicious Chicken Gravy. It had the flavor of fried chicken. It didn't need any additional seasonings, as the flavors of the seasoned fried chicken came through. I was so happy I could have slapped myself!
What I love about making pan gravies, is that it gives a head start to clean up, of the pan. The bits stuck to the pan, are lifted off, in the cooking process. If you started out with a pan of oil, it gets strained and put away. Once the gravy is made, clean up is a breeze!
Serve with Righteous Fried Chicken and mashed potatoes!
* If you use seasoned flour, leftover from frying chicken, there will be ragged bits in the flour. They have a different texture than the fried chicken bits. If you don't like that extra texture, strain gravy through a sieve. I prefer using the seasoned flour, because you don't have to add additional seasoning to the gravy.
CHICKEN GRAVY
INGREDIENTS:
2 Tablespoons crispy fried chicken bits, from frying chicken
4 Tablespoons flour - or - leftover seasoned flour from frying chicken *
4 Tablespoons cooking oil
2 Cups milk
DIRECTIONS:
Drain cooking oil from pan, after frying chicken. Return 2 tablespoons crispy fried chicken bits to the pan. Stir in flour and oil. Cook for 1 minute. Slowly whisk in milk. Bring to a boil, whisking continuously.
