I would like to thank, the person, who came up with Riced Cauliflower. Such a healthy swap for high carb, white rice. This is a healthy dish, that can be prepared quickly. It is a favorite recipe.

In the above picture, I used leftover roasted vegetables: broccoli, cauliflower, mushroom, onion, and sweet potato. I also added frozen green beans.

CAULIFLOWER FRIED RICE

INGREDIENTS:
Oil for frying
1/2 (12 ounce) Can Spam, diced
1 (12 ounce) Bag Frozen Riced Cauliflower
1 Egg
2 Cups assorted vegetables: fresh, frozen, leftovers
Kikoman's Teriyaki Sauce, if desired

DIRECTIONS:
Oil and heat a griddle, or large skillet, to medium high heat. Place spam on one side, of the griddle. Place riced cauliflower, on the other side. Brown the Spam. Let the cauliflower dry out. Make a space, in center, of griddle, to cook egg. Add a teaspoon oil, crack egg, and stir, to scramble. Stir Spam, rice and egg, to combine. Move rice mixture, to one half of the griddle. Heat vegetables, adding a little oil, to fry. Stir, to combine, all ingredients. Serve with Kikoman's Teriyaki Sauce, if desired.
