We've all been there. You try your best to separate the egg yolk, from the egg white. You can be the most careful, but sometimes the yolk breaks, and makes a runny mess, right into the egg whites.
To save your recipe, you need to clean up the egg whites. You can't have any egg yolk, in the whites. It defeats the purpose of having egg whites. Leave the egg yolk, and your cake won't rise. Your meringue won't get pillowy.
If you've tried to remove the egg yolk, you know it's nearly impossible. You can't grab the yolk, and pull it from the whites. Eggs are too slippery to handle.
