I rarely stabilize whipping cream, because I never have whipped cream in the heat, long enough to worry about it.
When I do need stabilized whipped cream, I add instant Sure Jel. By the name, you would think it’s gelatin. It’s not. It’s a modified cornstarch that doesn’t require heating, unlike gelatin.
I prefer Sure Jel versus instant pudding, or cream cheese, because Sure Jel doesn't change the flavor profile of the whipped cream.

1 Tablespoon Sure Jel
1/4 Cup sugar
2 Cups heavy whipping cream
DIRECTIONS:
In a small bowl, whisk Sure Jel and sugar. Set Aside. Add whipping cream, and sugar mixture, to a large mixing bowl. Using a mixer, whip on medium speed, until cream starts to thicken. Increase speed to high, and continue whipping until stiff peaks form. Be careful not to over mix.
