I rarely stabilize whipping cream, because I never have whipped cream in the heat, long enough to worry about it.

When I do need stabilized whipped cream, I add Instant Clear Jel Powder. By the name, you would think it’s gelatin. It’s not. It’s a modified cornstarch that doesn’t require heating, unlike gelatin. 

I prefer Instant Clear Jel Powder versus instant pudding, or cream cheese, because Instant Clear Jel Powder doesn't change the flavor profile of the whipped cream. 

All you have to do, is mix the Instant Clear Jel Powder  with sugar, before adding to the heavy whipping cream. That's the tip!

STABILIZED WHIPPED CREAM

INGREDIENTS:
1 Tablespoon Instant Clear Jel Powder 
1/4 Cup sugar
2 Cups heavy whipping cream

DIRECTIONS:
In a small bowl, whisk Instant Clear Jel Powder and sugar. Set Aside. Add whipping cream, and sugar mixture, to a large mixing bowl. Using a mixer, whip on medium speed, until cream starts to thicken. Increase speed to high, and continue whipping until stiff peaks form. Be careful not to over mix.
