Jell-O Poke Cake is celebrating its 50th anniversary this year! I remember this cake, as a child. It was fun to make, and oh so delicious.
I’ve always been drawn to vibrant colors. The Jell-O colors were fascinating to me. It’s tie-dye in cake form.
Since my granddaughter was in town, for a visit, I thought it would be fun to share a part of my childhood with her, while we made this cake.
I love the simplicity of this cake. It relies on packaged ingredients. The original recipe called for Cool Whip, but I prefer whipped cream, and it doesn’t take much effort, to whip cream.
My family loved this cake! It vanished, immediately. With Independence Day around the corner, I’m making this cake, for the family barbecue.

Jell-O Poke Cake By The Righteous Kitchen

CAKE:
1 (Box) White cake mix, Plus ingredients to make a 9” X 13” cake
JELL-O
1 (3 ounce) Box raspberry JELL-O
1 (3 ounce) Box blueberry JELL-O
1 Cup boiling water, divided
1 Cup cold water, divided
WHIPPED TOPPING:
1 Pint heavy whipping cream
1/4 Cup sugar
1 Tablespoon instant sure gel, optional, to stabilize
FRUIT:
1 Pound strawberries, de-stemmed, sliced vertically
1 Pint blueberries
TO PREPARE CAKE:
Preheat oven to 350 degrees. Coat a 9” X 13” cake pan with vegetable oil. Line with parchment, if you are removing the whole cake, from the pan. Set aside. Prepare, and bake, cake mix as directed on package. Approximately 35 minutes. Let cool. Poke holes, onto entire top of cake, using a round handled wooden spoon (alternatively poke holes with a serving sized fork).
TO PREPARE JELLO:
Place the contents, of each JELL-O packet, into a small bowl. Stir 1/2 cup boiling water, into each cup; until Jell-O has dissolved. Stir 1/2 cup cold water, into each bowl of Jell-O.
TO PREPARE WHIPPED TOPPING:
Beat heavy whipping cream and sugar, and instant sure gel on medium speed, until cream starts to thicken. Raise speed to high, and continue beating, just to stiff peaks. Careful not to over beat.
TO PREPARE FRUIT:
Wash fruit, under cold running water. Pat dry with paper towels. De-stem strawberries. And slice, vertically, into 1/8” slices.
TO ASSEMBLE:
Use a soup spoon, to pour the raspberry JELL-O into half of the holes, of the cake; making sure to distribute the raspberry JELL-O across the cake. Repeat with blueberry JELL-O. Spread whipped topping, evenly over cake. Decorate with fruit. Refrigerate at least an hour. Serves 20.
